HOMEMADE SPICE SEASONING MIXES
I make my own spice mixtures at home not only because I am a bit  frugal and I find those commercial spice packets to be packed with  sodium and preservatives, but also because my storecupboard is never short of  various spices which my father and brother often brings home from the  Middle-East. And through many years of having been familiar with spices,  I invented and replicated a few seasoning mixes on my own.
I love this Garlic and Paprika spice rub, because it imparts a  glorious reddish-brown color to the chicken/turkey as it cooks. And each  bit of this seasoning becomes more flavourful as it browns and  caramelizes specially on the crisping skin of the bird.
This homemade Mexican Spice Mix/Taco Seasoning mix was the result of my love of Mexican  food. I always make tacos and fajitas 3 times a month. I find the sweet  smokiness of the cumin, the earthy-minty nuance of oregano and the  vibrant spiciness and terracotta red color of chili powder and paprika  are what makes this seasoning mix very distinctively Mexican in taste.
GARLIC AND PAPRIKA SPICE RUB (for ROAST CHICKEN/TURKEY) & MEXICAN SPICE MIX/TACO SEASONING
Garlic and Paprika Spice Rub (for Roast Chicken/Turkey)- white vessel
Ingredients:
1 tablespoon coarse salt (not table salt)
2 tablespoons salt-free garlic and herb seasoning
1 teaspoon dried thyme
1 teaspoon cracked black pepper
1 teaspoon paprika
Procedure:
Combine all spice ingredients together and put the mixture into a  small jar. Store in a cool dry place. Can season 2 whole roasting  chickens.
Mexican Spice Mix/Taco Seasoning- black vessel
Ingredients:
1 tablespoon coarse salt (not table salt)
1 teaspoon ground coriander
2 tablespoons ground cumin
1/2 teaspoon cracked black pepper
2 teaspoons chili powder
1 teaspoon paprika
1 teaspoon dried oregano
2 teaspoons salt-free garlic and herb seasoning
Procedure:
Combine all spice ingredients together and put the mixture into a small jar. Store in a cool dry place.
